Young and passionate, Executive Chef Julio Gomez joins Mia Saigon since March 2021 and is willing to create a signature service that combines Quality and Satisfaction.
What attracted you to a career as a chef?
I was always very close to my mom, she used to work at her own kitchen so every time I got the best part of the dish shared by her, straight to the pot or the oven to my mouth, I understood the food in a very different perspective than the rest of my friends from breakfast to dinner every single dish was cook fresh, hot and with love!
What cuisine is your specialty?
Living in Asia for so many years gave the advantage of mix with different cultures, flavors and styles, I would say I have my own style, which like I said is a mix of cultures, Mediterranean based with a Latin Twist. Cooking is very much similar to music composing. There are different styles, different rhythms, different occasions and moods. For me I like to keep the harmony on the research I do behind every dish, however, the most important thing is that the person who is eating feels comfortable based on her mood or dietary requirements as long as we can follow our guideline.
How do you ensure the quality of the food that goes out to customers?
Everything starts with the draft menu which we need to ensure the consistency of the food quality and taste. It is not only the teamwork but also the product quality. The process of storing and preparing food is as important as the process of cooking and serving it to our valued guests.
What is your favorite cuisine?
My favorite cuisine is Mexican, followed by Indian, Japanese, Peruvian, Spanish and Chinese, not in any specific order. All of them have one thing in common that is Family Sharing style. I follow many different techniques, from expensive restaurants to street food. The good thing about being a chef is you will always find a different style, trends and techniques, doesn’t matter the city, language or nationality.
How would you elevate the culinary experience of Mia Saigon?
Consistency and details. Doesn’t matter which day of the week or what time of the day, the quality will be there. Besides, I really love the family dining moments where all members gather and enjoy a good time together. That experience is gold for me. I would love to see people having and enjoying the same experience at Mia.
